2 tbsp fresh parsley, chopped
1 tsp curry powder
1/8 tsp salt
1 lb boneless, skinless chicken breasts


PEANUT SAUCE


1 can (400 ml) unsweeteened coconut milk (approx 13/4 cups)
1 tsp red curry paste
1 tbsp sugar
1 tbsp soy sauce
1/2 cup unsalted, dry-roasted peanuts, ground OR 1/2 cup unsweetened peanut butter
