These fantastic chickpea blini are topped with hummus and mushrooms and are vegan and gluten free!

Ingredients

Serves: 32 blini
Prep Time: 20 mins
Total Time: 40 mins

1 cup chickpea (Garbanzo Bean or Besan) flour
1/2 tsp salt
1 cup water
2 tsp olive oil
olive oil for frying

HUMMUS:
2 cups cooked chickpeas (garbanzo beans)
2 tbs tahini
1 garlic clove
juice of 1 lemon
1/2 tsp ground cumin
1/2 tsp salt
1 to 2 tbs water

MUSHROOMS:
3 tbs dried porcini mushrooms
1/3 cup boiling water
500g (17 oz) button mushrooms, sliced
1 to 2 tbs olive oil, for frying
1 large clove of garlic, finely chopped
salt and pepper, to taste

TO SERVE:
microgreens
