For the Meatballs:
11/2 pounds ground chicken
1/2 cup whole wheat panko crumbs
1/3 cup finely minced onion
1 teaspoon dried parsley
1 tablespoon chopped fresh rosemary
1/2 cup freshly grated parmesan cheese
3 cloves garlic, minced
1 large egg lightly beaten
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons olive oil
4 ounces shredded mozzarella, about 1 cup
2 tablespoons freshly grated Parmesan
2-3 tablespoons minced fresh basil or parsley, for garnish
