This delicious granola has four kinds of nuts, oats, three kinds of dried fruit, honey, and coconut. Great for a snack, gift, or breakfast.
Ingredients
2 cups of nuts from the Planters Holiday Collection Tin (has pistachios, almonds, peanuts and cashews)
1 cup of unsweetened flaked coconut
3 cups rolled/old-fashioned oats (don’t use the quick or instant oats)
2/3 cup of honey (you can also use other liquid sweeteners such as agave but I like natural honey)
1 cup pumpkin seeds
1 teaspoon salt (most recipes call for kosher salt but I used regular table salt)
1 to 1.5 cups of dried fruit (I used a blend of dried cranberries, cherries and blueberries)
