Serves: 6 bell peppers

Filling:
3 cups cooked quinoa
1 cup sweet corn
2/3 cup black beans
1/2 cup cherry tomatoes (cut in half)
1/4 cup chopped mushrooms
1/2 cup chopped onions
1/4 cup chopped cilantro
3/4 cup shredded 2% mexican blend cheese
1/2 tsp garlic salt (don't omit!)
salt and pepper to taste
6 bell peppers, hollowed out and with tops cut off
