Ingredients
Serves: Serves 4
Prep Time: 30 minutesCook time:
1 Brown or Red Onion, Chopped
1 cup Chopped Mushrooms
2 Garlic Cloves, finely Chopped
2 Tablespoon Olive Oil
1 cup cooked Quinoa
2 Tablespoons Pesto
I made my own, but you can use store bought if you'd like.
1 cup White Beans, if canned, slightly drained.
1 cup Roasted Asparagus, Chopped
1 cup Roasted Yam Cubes
2 Tablespoons Red Wine Vinegar
16 Medium Shrimp, Thirded
Kosher or Sea Salt to taste.
Preparation
