These Creole Red Beans and Rice are a traditional Monday meal in New Orleans...enjoy!

Ingredients

1 pound dried red beans
2 Tbsp olive oil
4 ounces tasso, chopped (optional, see note)
1 large yellow onion, diced
2 stalks celery, diced
1 green pepper, diced
1 Tbsp Cajun seasoning
2 Tbsp fresh parsley, chopped
3/4 pound andouille sausage (or smoked sausage), sliced and quartered
4 cloves garlic, minced
8 cups low-sodium chicken broth or water (can also use 1/2 broth and 1/2 water)
4 cups white rice, cooked
1/4 cup green onions, sliced
hot sauce (optional)
