15 ounces low fat ricotta cheese
1 large egg, beaten
1/2 cup freshly grated Parmesan cheese, divided
1/2 cup shredded mozzarella cheese
Coarse kosher salt and freshly ground black pepper
Finely chopped fresh parsley and/or basil (optional)
