Here is a simple little dinner with cheesy, veggie-filled pasta baked in creamy bechamel. Not too heavy – just a nice meal that reheats well too!
Ingredients
12 lasagna noodles
2 T extra virgin olive oil
8 oz white button or baby bella mushrooms, sliced
1 small onion, diced
1 clove garlic, minced
1 c finely chopped broccoli
1 c chopped fresh baby spinach leaves
1 T fresh thyme leaves
1/4 c fresh parsley
1/4 c Parmigiana-Reggiano cheese
1 (15 oz) tub part-skim ricotta cheese
kosher salt
fresh cracked pepper
2 T unsalted butter
2 T all-purpose flour
2 c milk
1 c shredded part-skim mozzarella
