Ooey Gooey Caramel Apple Crisp - excellent hot from the oven with ice cream!

1 ½ cups quick-cook oatmeal
½ cup brown sugar (packed)
½ teaspoon cinnamon ….sometimes I use a little more
½ cup softened butter
6 cups of peeled and sliced apples – about 8 apples
10 caramels cut in half
