8 Green chilies
3 Shallots , cut in cubes
7 Cloves Garlic
2 ts Coriander seeds
2 ts Cumin seeds
3 inch piece Lemon grass ( no alternative to this)
2 Ginger pieces(1 inch), The original recipe uses galangal (if you don’t have galangal, use ginger instead in double quantity)
1/4 ts Lemon zest grated
handful of Coriander leaves
Salt & pepper to taste
