1 pound boneless skinless chicken breast (or boneless thigh meat), cut into small bite sized pieces
2 Tablespoons olive oil
1 bunch of kale, ribs removed and leaves chopped
1 large carrots, chopped
1/2 medium onion, minced
1 inch knob ginger, peeled & smashed
4 cups chicken stock
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1 teaspoon soy sauce (Use Tamari for gluten free)
salt to taste, depending on how salty your stock is
