Prep Time: 30 minutes
Cook Time: 40 minutes
Total Time: 1 hour, 10 minutes

Coconut Macaroon:
3 cups unsweetened coconut crumbs
3 eggs whites
3/4 cup granulated sugar

Chocolate Filling:
5 ounces dark chocolate. chopped
7 tablespoons unsalted butter
2 eggs + 2 egg yolks
1/4 cup granulated sugar
2 tablespoons all-purpose flour (may use gluten free flour if needed)

Caramel Somoa Topping:
1/4 cup water
1 cup sugar
5 tablespoons butter
1/2 cup full-fat canned coconut milk (or heavy cream)
1 tablespoon vanilla
3 cups shredded sweetened coconut
8 ounces dark chocolate, melted
