2 tablespoons olive oil
1 shallot, minced
2 garlic cloves, minced
3 cups cremini mushrooms, washed and dried
1/2 cup vegetable stock
3/4 cup marsala cooking wine
1 teaspoon salt
1/2 teaspoon pepper
2 cups fresh spinach
1/2 cup mascarpone cheese
1/4 cup pecorino cheese, grated (asiago or parmesan would be good substitutes)
juice of 2 lemons
2/3 cup toasted hazelnuts
