A great way to "beef" up your sauce is with eggplant! Give it a try, very delicious.

2 T Olive oil
2 1/4 cups chopped onion
3/4 tsp kosher salt, divided
1/2 tsp freshly ground black pepper
1/2 pound ground sirloin
8 cups chopped and peeled eggplant (about 1 1/2 pounds.)
1 T minced garlic
1 T tomato paste
1/2 c red wine
1 can crushed tomatoes
1 T red wine vinegar
10 ounce package whole wheat fettucine
1/4 c basil leaves
