For Panna Cotta:
3 tablespoons of water
2 teaspoons unflavored gelatin
1/2 cup full fat or 2% greek yogurt
1/2 cup whole milk
1 cup heavy/double cream
3 tablespoons brown sugar or 1/4 cup granulated white sugar
vanilla extract or vanilla bean seeds (optional)

For Raspberry Coulis:
3/4 -1 cup raspberries, fresh or frozen and defrosted (reserve 6 for decoration)
1 tablespoon sugar
1/2 cup water
1/4 teaspoon unflavored gelatin
