1 cup cinnamon graham cracker crumbs (about 1 sleeve of crackers)
2 tablespoons white sugar
4 tablespoons butter, melted

Cheesecake:
11 oz white chocolate chips
1/2 cup half and half
3 (8 oz) packages cream cheese, softened
1/2 cup sugar
3 eggs, at room temperature
1 teaspoon vanilla extract
1 cup roughly chopped macadamia nuts, plus more for topping if desired

Caramel:
1/4 cup water
1 cup sugar
3/4 cup heavy cream
3 1/2 tablespoons butter, cut into 12 cubes
1/2 teaspoon salt
