A fresh and light mini summer cake - perfect portion control!

Serves: 5 mini cakes

1 stick unsalted butter, room temperature
3/4 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/5 cup buttermilk (regular milk works too)
1.5 cups cake flour
2 teaspoons baking powder
1/3 cup berry coulis
1/2 teaspoon salt
1 cup whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 cups fresh berries (I used blackberries and blueberries)
