1/2 small butternut squash, peeled and chopped into small cubes
1 large apple, peeled and chopped
1/2 sweet onion, chopped
2 cups brussel sprouts, chopped (optional)
2 tablespoons olive oil
1/2 teaspoon nutmeg
1 tablespoon butter
1 tablespoon flour
2 cups milk
8 ounces cheese, shredded (I used smoked cheddar)
1/2 cup shredded parmesan cheese + more for topping
1/4 cup Panko bread crumbs
