For the pasta:
1 1/4 c. all-purpose flour
3/4 c. semolina flour
1 t. sea salt
6 large eggs
1 T. extra-virgin olive oil

For the filling:
1 small shallot
3 T. extra-virgin olive oil
2 lb. organic spinach
3 c. fresh cow-milk ricotta
3/4 c. freshly grated Parmigiano-Reggiano
1/2 T. ground nutmeg
Sea salt to taste
Black pepper to taste

For the ravioli:
1 egg
1 T. water
