Beef 'n Cheddar Salad with Creamy Roasted Garlic & Lemon Dressing

Combine all ingredients and blend until smooth. You can use more or less milk or cream depending on how thick you like your dressing. Store, covered in the fridge. Serve over salad.
Ingredients
For my 'Beef n Cheddar' salad, I use
romaine lettuce
GOOD deli roast beef
sharp cheddar cheese
tomatoes
carrots
cucumbers
bell peppers
purple onion
For the dressing:
1/4 cup Roasted Garlic, mashed into a paste (I roast it using this method. It takes me about 2 whole bulbs to get 1/4 cup)
1/2 cup Mayonnaise
3 TBSP grated Parmesan Cheese
1 Lemon, the zest and the juice
1/4 cup Heavy Cream
1/4 cup Whole Milk
1 tsp Salt
1 tsp Black Pepper
