1-2 tablespoons adobo sauce, from a can of chipotle peppers in adobo sauce (optional)

4 jalapenos
1-2 cups mexican-blend shredded cheese
1/2 cup red onion, minced
2 mangoes, diced
1 pint cherry tomatoes, quartered
1-2 avocados, diced
