Ingredients

1 large head of cauliflower, cut into florets
2 tsp olive oil
1 Tbsp unsalted butter
½ cup diced onion
2 garlic cloves, minced
4 cups beef broth (can substitute with chicken or vegetable broth)
1 cup water
½ cup heavy cream
Salt and pepper
For the croutons:
½ loaf Sourdough round, cut into bite sized pieces
1 Tbsp olive oil
½ cup grated Parmesan cheese
