Ingredients

2 1/2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground cloves
2 Tbsp. buttermilk powder
3 large eggs
1 (4-oz.) can of carrot baby food
1 1/2 c. brown sugar, packed
1/2 c. canola oil
1 lb. carrot, finely shredded
2 tsp. vanilla extract
1/2 c. shredded coconut
1/2 c. toasted pecans, roughly chopped
2 (8 oz.) package of cream cheese, at room temperature
1 c. marshmallow cream
1 1/2 tsp. vanilla extract
2/3 c. powdered sugar
Whole toasted pecans and shredded coconut for garnish
