When you taste the cake, you can tell that it’s made with olive oil because it’s so moist. And you don’t have to smother the cake in glaze because there’s a delicate sweetness to the cake itself that comes from the buttery almond flavor of the Extra Virgin Olive Oil.

For Cake:
1 1/2 cups plus 2 tablespoons whole wheat pastry flour
1 1/2 teaspoons baking powder
1 teaspoon sea salt
3 large eggs
3/4 cup dark brown sugar
1/2 cup Pompeian Arbequina Extra Virgin Olive Oil
3 tablespoons honey
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
grated zest of 1 medium lemon
1/2 cup orange juice

For Glaze:
2 tablespoons unsalted butter
1 cup confectioners’ sugar
3 tablespoons milk
1 tablespoon fresh lemon juice
1/2 cup dry roasted almonds, chopped
