4 Medium Boneless Chicken Breasts
¼ cup Chopped Sun Dried Tomato (you can also use a Roma Tomato)
2 Tablespoons all purpose Flour
¼ Teaspoon Salt
¼ Teaspoon Pepper
½ cup dried bread crumbs
2 Tablespoons grated Parmesan Cheese
1 Egg
6 ounces of Sharp Cheddar – cut into chunks
1 Tablespoon dried or fresh Tarragon
2 Tablespoons of melted Butter
