Delicious and easy. It's worth keeping a batch of caramelized onions in the freezer just so you could make this tart whenever you want!

Category: main dish

Ingredients

For the tart dough:
1/2 cup butter, cut into pieces and softened
3 ounces cream cheese, cut into pieces softened
1 cup flour

For the onion filling:
3 large onions, cut into petals
3 tablespoons olive oil
1 tablespoon butter
1 tablespoon fresh thyme leaves (less if using dried)
3/4 cup grated semi-hard cheese; Swiss is good. I used Manchego because we had it in the fridge
salt and pepper to taste
A generous splash of balsamic vinegar OR brandy OR red wine (one or two teaspoons for the balsamic, more for the brandy or wine…start with a smaller amount and add more as you like)
