Homemade version of a delicious pub appetizer. Use leftover corned beef or buy some from the deli.


1 pack egg roll wrappers
4 ounces corned beef, shredded or finely diced (about a cup in volume)
2 to 3 cups cups cole slaw mix
1/2 cup or more mashed potatoes
salt and pepper to taste
oil for frying
mustard for dipping
