Serves 4

2 tablespoons olive oil
4 chicken breasts
Salt and freshly ground black pepper
2 large onions, thickly sliced
1 head of garlic, cloves peeled but left whole
1/4 cup dry white wine (or white-wine vinegar or stock if you don?t want to use wine)
5 tablespoons chopped fresh herbs (basil, parsley, chives, etc.)
Juice of 2 lemons
Green salad, to serve
Crusty bread, to serve
