Cook ground sausage thoroughly, drain and set aside. Fry cubed potatoes until almost tender, then add bell pepper and green onion and continue frying until all are tender. Beat eggs, mix in milk, and cook to the consistency you prefer. Mix all cooked components together. Serve either in heated soft corn (way less sodium than flour) tortillas or in a bowl sprinkled with cheese.
