Ingredients
For the fritter you will need:
2 cans drained Ocean Naturals skipjack chunk light tuna
1/4 cup rinsed black beans
1/4 cup diced roasted Serrano peppers (Walmart sell fresh that I just bake then freeze)
1/8 cup diced roasted red peppers
1/4 cup cooked sweet corn
1-2 Tbsp any southwest seasoning
1 whole egg
1/4 cup all purpose flour (if you are gluten free use 1/4 cup rice flour)
salt and pepper as you like
**1-2 Tbsp grape seed oil
For the fritter dressing and serving you will need:
1 heaping Tbsp ranch dressing powder
1/2 cup light sour cream
1/3 cup diced avocado
1/3 diced fresh tomato
salt and pepper as you like
*a dash of hot sauce is a great addition if you enjoy some heat
1 large head of washed organic romaine lettuce, root sliced off
