Ingredients

5 c. chicken stock
1 Tbsp. olive oil
1 Tbsp. butter, unsalted
1 small yellow onion, diced
1 1/2 c. arborio rice
3 ears of corn, shucked and kernels cut off
1/2 c. Pecorino Romano
2 Tbsp. butter
salt and pepper to taste
3 green onions, sliced for garnish
Parmesan cheese for garnish
