1 Whole Chuck Roast 3-4 pounds (for Brian and I we used a smaller 2.5 pound roast)
3 TBSP of Extra Virgin Olive Oil
4 medium sized yellow onions
1 lb bag of baby carrots
4 -5 stalks of celery
Salt and pepper to taste
1 Cup of Red Wine for cooking
4 Cups of Beef Stock
1 tsp of dried Rosemary
1 tsp of dried Thyme
