4 cups water
1 4-6" piece Kombu
1 tbs olive oil
1/2 onion: chopped
2" ginger: peeled and minced
2 cloves garlic: minced
2 sweet potatoes: peeled and chopped
1 cup mung beans
1-2 more cups water
2 tsp garam masala
1/2 teaspoon cumin
dash of cinnamon
1-2 cups spinach: washed and ends trimmed
