This is a "Two-Way" recipe - it can be made for meat-eaters, vegetarians, or both.

Ingredients

½ lb mushrooms, chopped
1 medium onion, chopped
½ Tbs olive oil
2 tsp chili powder, more or less, to taste
2 cloves garlic, minced or pressed
15 oz canned diced tomatoes
15 oz tomato sauce
2 Tablespoons chopped olives
1 cup frozen corn
15 oz black beans, rinsed and drained (optional)
¾ cup grated cheddar cheese, or as needed
salt and pepper, to taste
2 Tbs honey
1 cup grated cheddar cheese
½ lb ground beef, ground turkey
and/or
½ lb vegetarian ground meat substitute (I like Morningstar Farms® Meal Starters Grillers® Recipe Crumbles™)

Topping:
Ingredients to make 1 batch of your favorite cornbread recipe
or 1 box Jiffy cornbread mix & ingredients to prepare
