These little cheese rolls are crusty on the outside and chewy on the inside. The tapioca flour makes them truly unique! Go to the notes section of the recipe for a completely gluten-free variation.

1/4 cup water
1/4 cup canola oil
Dash of salt
1 cup tapioca flour
1/3 cup unbleached all-purpose flour
1/3 cup crumbled queso fresco, packed (I recommend Cacique Ranchero brand)
1/3 cup grated Parmesan cheese, packed
