I love apricots! Today I took advantage of the apricots that I had in the fridge and thyme of my small aromatic herb garden for cooking a good cake, soft and fragrant.

Ingredients

Yield: 20cm x 20cm square cake

4 eggs separated
130 g of caster sugar
1 sachet of vanilla sugar
zest of 1 lemon
half a bag of baking powder
180 g of flour
130 g of butter
3 tablespoons apricot liqueur *
(Or amaretto)
a sprig of fresh thyme
1 pinch of salt

* For the non-alcoholic version you can replace the liquor with 3 tablespoons milk 3 tablespoons of juice or fruit to taste.
