Ingredients
FOR THE DRESSING:
1 cup Thai spicy peanut butter (or 1 cup chunky peanut butter and 1 tablespoon chili paste of gochujang)
1/3 cup tamari soy sauce
1/8 cup sesame oil
2 tablespoons fish sauce
2 tablespoons ground fresh ginger
2 tablespoons brown sugar
1 tablespoon minced garlic
1 teaspoon rice vinegar
FOR THE BEEF:
1/4 cup tamari soy sauce
2 tablespoons ground fresh ginger
2 tablespoons minced garlic
1 tablespoon sesame oil
1 pound thin sliced eye of round
FOR THE NOODLE BOWL:
8 ounces rice noodles, cooked and chilled
1 cup coarsely shredded carrots
1 cup thinly sliced cucumber
1 cup thinly sliced radish
1/2 cup sliced green onion
1/4 cup dry-roasted peanuts
