Preheat oven to 350.
In a large bowl, cream butter and sugar until smooth.
Add egg, vanilla, lemon juice and zest. Mix until combined.
Add flour evenly distributed over egg mixture.
Sprinkle remaining dry ingredients over flour.
Mix until fully combined.

1 teaspoon lemon juice
1 Tablespoon lemon zest
½ teaspoon salt
½ teaspoon baking powder
2¼ + 1/2 cups Bob's Red Mill all-purpose or Gluten Free flour
Blueberry cream filling:
1/2 cup frozen blueberries, defrosted
1 stick unsalted butter, softened
1 teaspoon milk
1 teaspoon vanilla extract (or blueberry for more flavor)
3 cups powdered sugar + 1/2 cup
