Giant Ice Cream Cookie Sandwich:

1 gallon ice cream of your choice, softened
ice cream toppings, optional
Chocolate Chip Cookies:
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup brown sugar
3/4 cup granulated sugar
1 egg, beaten
2 tsp vanilla
2 cups flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
1 cup semisweet chocolate chips
