1 teaspoon honey (plus more for drizzling)

¼ teaspoon vanilla extract (clear)
½ teaspoon freshly grated lemon zest
the topping
2 tablespoons slivered almonds, lightly toasted, sprinkled over the top
1-2 amaretti cookies, crushed and sprinkled over tops of peaches
honey for drizzling
mint leaves for decorating
