750g Aubergines (purple ones preferably)
300g Breadcrumbs
150g Parmesan cheese
200g Sliced Caciocavallo cheese or an alternative such as Edam
750g Tomato passata
1 Onion
1 Clove garlic
2 tbsp Extra virgin olive oil
100g Black olives in brine (chopped)
Some Basil leaves;
Salt to taste.
