500g bow tie pasta (farfalle)
1 medium chopped onion
2-3 chopped garlic cloves
4 tbsps olive oil
1 large red or yellow bell pepper
15-16 asparagus spears (cut into lengths)
1/4 cup peas
2 medium carrots cut into thin strips
10 cherry tomatoes cut in halves
red pepper flakes to taste
salt to taste
1/4 cup grated parmesan
1-2 tbsps lemon zest
A pinch of saffron dissolved in 1 tbsp water (optional)
