A nice change from the usual carrot cake.

This batter turns bright purple when you stir in the roasted beets but fades to a regular cupcake appearance once baked.

Ingredients

For the cupcakes
3 roasted beets, 2 cups shredded
1/3 cup butter, melted
3 tbs vegetable oil
2 eggs
1 tsp vanilla extract
1 cup sugar
1tsp baking soda
1/2 tsp coarse kosher salt
1 tsp orange zest
1 cup flour
For the frosting
4 oz cream cheese or neufchatel cheese, softened
4 oz mascarpone cheese, softened
1 cup confectioner's sugar
2 tbs butter, softened
pinch of salt
