I made this for a party but I would eat this everyday of my life: Hot Fontina & Crab Dip. The crispy Parmesan-Fontina top layer was divine!

Ingredients

1 shallot, minced
2 tablespoons butter
1 small pinch saffron
1 tsp. red pepper flakes, opt.
4 oz. creme fraiche
8 oz. cream cheese, room temperature
8 oz. Fontina cheese, shredded, divided
1/2 cup mayonnaise
2 tsp. sherry vinegar
Salt & pepper
8 oz. lump crab meat, picked over
2-4 oz. Parmesan cheese, shredded
3-4 fresh chives, minced
Crackers or bread, for serving
