Closed Oven Turkey:
1 Turkey 12-20 pounds, completely thawed
2 stalks celery, rough chopped
1 medium to large apple, rough chopped
1 medium to large onion, rough chopped
½ cup (1 stick) butter, cut in 4-6 pieces
1 cup water
Salt & pepper
Light olive oil
Roasting pan with lid *that will close tightly with turkey inside
Turkey Gravy (Serves: 2 cups):
4 tablespoons table flour
5 tablespoons lukewarm water
21/2 cups turkey stock
¾ cup of white wine
½ teaspoon salt
Pepper to taste
