Marinated wok-fried chicken, Sriracha-lime mayonnaise, a pickled daikon/carrot/onion mix, jalapenos and cilantro… all on a nice fresh baguette – I tell you this is happiness.

Oil for pan frying
Four 8-inch soft baguette rolls or loaf of French bread
1/2 cup cilantro
1 jalapeno, seeded & finely sliced
2 chicken breasts, sliced in 1/4-inch thick strips/pieces
1/2 cup fish sauce, opt.
1 tablespoon sugar
1 tablespoon Sriracha
2 tablespoons fresh-squeezed lime juice
2 tablespoons sesame oil
1 tablespoon ginger, grated*
2 garlic cloves, grated
2 large carrots
1 daikon radish
1/2 med. white onion
1 Tablespoon sea salt
4 tablespoons sugar
1/2 cup rice wine vinegar
1/2 cup water
1/2 cup mayo
1 tablespoon Sriracha
1 tablespoon fresh-squeezed lime juice
