1 package frozen puff pastry, thawed in fridge overnight
Flour, to dust
1 egg, lightly beaten + 1 tsp water
Sesame seeds
Samosa Filling:
3 medium potatoes, quartered
3/4 cup frozen peas
1 Tbsp grapeseed oil
1/2 inch fresh ginger, grated
1 red chilli, chopped (optional)
11/2 tsp Garam Masala
1/4 tsp Indian chili powder (or 1/2 tsp chili flakes if unavailable)
1 tsp fennel seeds
1 tsp ground coriander
2 tsp cumin seeds
11/2 tsp salt
2 Tbsp fresh cilantro, chopped
1 lemon, juiced
Tamarind Sauce:
4 Tbsp tamarind concentrate
4 Tbsp brown sugar
2 cups water
1/2 tsp chili flakes (optional)
