1/3 tsp vanilla essence
3/4 tsp instant yeast
30g sugar
200g bread flour
1/3 tsp salt
1/4 tsp mixed spice
60g mixed dried fruit
25g egg

Topping:
8 tsp plain flour
4 tsp caster sugar
enough water to form a roux
