PRETZEL DOUGH:
2 1/4 tsp. (1 package) active dry yeast
1 tsp. + 2 Tbsp. granulated sugar
1 1/4 c. warm water (110°F)
5 c. all purpose flour
1 1/2 tsp. kosher salt
3 Tbsp. melted butter, cooled to room temp.
1/2 c. baking soda
8 c. water
2-3 Tbsp. flake or kosher salt, for topping
DIPPING SAUCE:
1 Tbsp. unsalted butter
1 1/2 Tbsp. all purpose flour
1/4 c. sour cream
1/3 c. + 1 Tbsp. Guinness or other stout, dark beer
1 Tbsp. Mustard and Co. Garlic Dill mustard, or similar
4 oz. sharp cheddar cheese, grated
Kosher salt and freshly ground pepper, to taste
